GLOBASY Multi-Deck Steam Tube Ovens are engineered to meet specific customer demands for high production capacity and versatile baking systems, incorporating the latest technology. These ovens feature fixed decks and steam tubes, designed with significant thermal mass for a unique gradual cooking process. They can be powered by either gas or diesel. The fume ducts are constructed from refractory bricks and fully coated with cement, while each deck's tube bundle is reinforced with double cross beams, enhancing the oven's thermal mass. Additionally, the oven's sides and top are covered with concrete and insulated to minimize heat loss. A motorized shutter on the fume chimney further reduces energy loss. After the main baking phase, the oven can continue to bake products such as pastries or biscuits with the burner turned off, resulting in zero energy costs during this period. The oven’s safety thermostat ensures compliance with all CE safety standards and regulations.
